Healthy and Super Quick Kimchi Salad

This cabbage salad is super delicious and very simple to make; all you need is cabbage, sugar and vinegar. It can be a great addition to a meal at a party without you having to spend hours in the kitchen.

Ingredients for Kimchi Salad

  • 1/2 medium-sized cabbage
  • 6 teaspoons vinegar
  • 6 teaspoons sugar
  • 7 fl.oz. water
  • 1/4 teaspoon ginger (finely chopped or grated)
  • Black pepper


Cut the cabbage into 1 1/2 inch square pieces. An easy way to do it is to slice the cabbage into half, cut horizontal lines leaves the stem intact, and then cutting vertical lines to make perfect squares.


kimchee_salad_recipeAfter you’ve cut the cabbage, put it in the microwave for 30 seconds to remove excessive crunchiness. You shouldn’t need to chew on it much.

Heat 7 fl.oz. water in a pan.

kimchi_salad_recipe_ photosAdd sugar and vinegar. You need the water hot enough to dissolve the sugar.

Pour it into a container. Add cabbage, ginger, and black pepper.

Place a smaller container on top of the container to push the cabbage down. You can keep a weight on top to make it heavy. (I discovered that my coffee sieve sifter was perfect for it!)

cabbage_salad_recipesLet it stay for 50 minutes. For best results, 2 hours is recommended.

If you want it hot, add crushed red pepper flakes!


I had the entire half-cabbage kimchi once, it’s so delicious!
