Ingredients for kheer/rice pudding:
- 3 tablespoons rice
- 4 cups milk
- 1/2 cup sugar
- 4 pinches cardamom powder
- 6-7 almonds and cashews (chopped) (optional)
- 3-4 saffron threads (optional)
In a deep pan or wok, dry roast the rice for a minute on low heat.
Add milk and mix.
On low heat, let the rice cook in the milk. It will take around 30 minutes for the rice to cook. The rice flakes will become translucent when cooked.
Add cardamom, sugar, almonds, cashews, and saffron. Mix to dissolve the sugar.
Cook for another 10 minutes to let the flavors set in.
