Easy to make, healthy okra tomato curry is loved by kids and grown-ups alike!
- 1 lb/250 gm okra/bhindi
- 2 tomatoes (diced)
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 2 pinches red chilli powder
- 1 chopped green chilli (optional)
- Salt and black pepper
Cut the okra into small pieces.
In a deep pan or a wok, heat 1 tablespoon vegetable oil.
Put turmeric powder, coriander powder, red chili powder, and tomatoes. Cook the tomatoes for 5-7 minutes on low heat.
Add okra, salt, and black pepper. Mix well.
Cook for 15-17 minutes on low heat.
